Vegan Blueberry Muffins

These light and delicious muffins are always sought after at breakfast and many guests take them on their adventures.

Ingredients (makes 10 Muffins):

* 250g plain flour

* 150g caster sugar

* 2 tsp baking powder

* 1/2 tsp salt

* 240ml unsweetened Soy milk (or Oat)

* 80g Soy yoghurt (or Oat)

* 60 ml sunflower oil

* 1 tsp cider or white wine vinegar

* 2 tsp vanilla extract

* 180g fresh blueberries

* 1 tbsp plain flour

Instructions

* Preheat Oven to 220 degrees celsius. Line your muffin tin with 10 muffin cases

* In a large bowl, whisk the flour, sugar, baking powder and salt

* In a jug, whisk the milk, yoghurt oil, vinegar and vanilla extract

* Lightly mix the blueberries with the tbsp of flour and shake off excess

* Combine the wet and dry ingredients and stir with a balloon whisk until no dry streaks are left, do not over-beat the batter

* Add two thirds of the blueberries and fold into the mix gently

* Pour the batter into the muffin cases with an equal amount in each, once complete scatter a few of the remaining blueberries on top

* Bake for 5 mins and then reduce temperature to 190 degrees celsius and bake for a further 15-18 mins until a light golden colour, test with a skewer making sure it comes out clean

* Leave to cool in the tin for 5 mins, and then remove muffins onto a wire rack to cool.

* Finish with a little icing sugar if desired.

Vegan Pancakes

Take your Pancakes to the next level with this simple and totally delicious recipe - light, fluffy with a crispy edge - perfection.

Ingredients (makes approx 10 Pancakes):

* 1 Cup Oat Milk

* 1 tbsp apple cider vinegar

* 1 tsp vanilla extract

* 1 cup plain flour

* 1 tbsp sugar

* 1 tbsp baking powder

* 1/2 tsp salt

Instructions

* Mix all ingredients well in a large bowl

* Leave to sit for 5 mins

* Pour or spoon into a hot pan with oil

* fry for 2/3 mins (you can add chocolate drops, or blueberries at this point) before flipping and repeat

* Serve immediately - we LOVE them with Sugar and Lemon, or Vegan Bacon and Maple Syrup, or Blueberries and Icing Sugar, or Chocolate Spread.

 

Add blueberries (or any other berries) or chocolate drops to the pancakes before flipping!

 

Vegan Chocolate Chip Cookies

Ready and waiting in guests room for their arrival at The Earlsdale - James' cookie recipe is a secret no more!

Ingredients (makes approx 20 cookies):

* 65g coconut oil (melted)

* 60g vegan butter (softened)

* 100g dark brown sugar

* 75g light brown sugar

* 125g Biscoff spread

* 300g Plain Flour

* 1/2 tsp bicarbonate of soda

* 1 tsp baking powder

* 1/2 tsp salt

* 75ml oat Milk

* 50g vegan choc chips

Instructions

* Pre heat oven 180 celsius 

* Cream together the Coconut oil, butter, Biscoff spread and sugars using a stand mixer (5mins approx)

* Fold in the flour, baking powder, bicarb and salt

* Mix in Oat milk slowly to form a dough

* Mix in choc chips

* Form into 45g balls

* Place on baking tray, and space balls evenly before popping in the over and baking for 9 minutes.

* For a crunchy bite, bake for an additional 2 minutes

* Remove tray and allow to cool before enjoying!
